Today, I’m diving into a fun twist on a classic: casserole nachos!
These bad boys are loaded with flavors, super easy to make, and perfect for game day or movie night.
Trust me, this recipe will take your nacho game to a whole new level!

Ingredients
For the crust:
- 12 oz tortilla chips (I like Tostitos brand for this recipe)
- 1/2 cup melted butter
For the filling:
- 1 can sliced black olives, drained
- 1 lb lean ground beef (90/10 chuck works well)
- 16 oz medium-hot salsa (Pace is my go-to)
- 2 tbsp grapeseed oil
- 1 medium yellow onion, chopped (about 1 cup)
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1/2 cup grated pepperjack cheese
- 1/2 tsp garlic salt
- 1 cup grated cheddar cheese (sharp cheddar adds more flavor)
For the topping:
- 1/4 cup chopped cilantro
- 1 cup grated cheddar cheese
- 1/2 cup grated pepperjack cheese
- 3 large green onions, sliced (freshly sliced for garnish)
Step 1: Prepare the Crust
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
Place tortilla chips in a blender and pulse until they form fine crumbs.
Add the melted butter and continue to pulse until well combined.
Press this mixture into the bottom of a 13×9″ baking dish.
Bake for 8-10 minutes, or until golden brown.
Once baked, set the crust aside to cool.
Step 2: Cook the Filling
While the crust is cooling, heat oil in a large skillet over medium-high heat.
Add the onion, red peppers, green peppers, ground beef, and garlic salt.
Cook, stirring frequently to break up clumps of beef, until the peppers are soft and the beef is no longer pink, about 5 minutes.
Drain off any excess fat from the skillet.
Step 3: Combine Ingredients
In a large bowl, pour in the jar of salsa.
Fold in the cooked beef mixture, 1 cup of cheddar cheese, 1/2 cup of pepper jack cheese, and olives.
Mix everything until well combined.
Then, scrape this entire mixture into the prepared crust.
Step 4: Add Cheese Topping and Bake
Sprinkle the remaining cheddar and pepper jack cheeses evenly over the top of the beef mixture.
Place the baking dish back into the oven and bake at 375 degrees Fahrenheit (190 degrees Celsius) for 30 minutes, or until the cheese is melted and bubbly.
Step 5: Garnish and Serve
After baking, remove the dish from the oven and immediately sprinkle green onions and cilantro evenly over the top.
Let it cool slightly before serving.
