Today, I’m excited to share my favorite recipe for Christmas cookies made with almond flour.
They’re soft, chewy, and oh-so-delicious! Plus, they’re perfect for anyone looking for a gluten-free treat.

Ingredients
- 2 cups almond flour (I use Bob’s Red Mill super-fine)
- 1 pinch salt
- 1/4 cup brown sugar (packed well for accurate measurement)
- red and green sprinkles (optional, for festive decoration)
- fresh orange or lemon zest (optional, adds a bright citrus note)
- 6 tbsp unsalted butter (Kerrygold is excellent for baking)
- 1/2 tsp vanilla extract
Step 1: Preheat the Oven and Prepare Baking Sheet
Preheat your oven to 350°F (175°C).
While the oven is heating up, prepare a cookie sheet by lining it with parchment paper or a silicone baking mat to prevent the cookies from sticking.
Step 2: Combine Dry and Wet Ingredients
In a mixing bowl, combine 2 cups of almond flour, 1/4 cup of packed brown sugar (or white granulated sugar), 1/2 teaspoon of vanilla extract, and 6 tablespoons of unsalted butter (cut into pieces).
Add a pinch of salt (about 1/8 teaspoon) to the mixture.
Mix the ingredients together thoroughly until the dough comes together and holds its shape.
Step 3: Shape the Dough
Using a tablespoon cookie scoop, portion out the dough and roll it into balls.
Flatten each cookie slightly with your hands or use cookie cutters to create different shapes if desired.
This helps the cookies bake evenly.
Step 4: Arrange and Decorate the Cookies
Place the cookies on the prepared baking sheet, ensuring they are evenly spaced to allow for spreading during baking.
If you like, add some red and green sprinkles on top of the cookies for a festive touch before baking.
Step 5: Bake the Cookies
Bake the cookies in the preheated oven for 8 to 12 minutes.
Check for doneness starting at the 8-minute mark.
The cookies should be lightly golden around the edges.
Avoid over-baking to keep them tender.
Step 6: Cool and Serve
Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for 5 to 15 minutes to firm up.
After they have cooled slightly, transfer them to a plate and enjoy!
