Preparation Time | 20-30 minutes |
Cooking Time | 9-11 minutes per batch |
Total Time | 50-70 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 cup unsalted butter (225g)
- 1 cup light brown sugar (200g)
- 2/3 cup granulated sugar (135g)
- 2 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour (340g)
- 1 teaspoon cornstarch
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- Flaky sea salt (for sprinkling, optional)
- 2/3 cup caramel bits or chopped caramels
- 4 oz semisweet chocolate bar (finely chopped, 113g)
- 1/2 cup crumbled bacon (about 4-5 slices)
Step 1: Brown the Butter
In a medium-sized saucepan, melt 1 cup of unsalted butter over medium/low heat.
Once melted, increase the heat to just above medium and stir constantly until the butter bubbles and sizzles.
Continue stirring until the butter’s milk solids turn golden brown.
Remove the saucepan from heat and pour the browned butter into a large heatproof bowl.
Allow it to cool to room temperature.
Step 2: Prepare the Oven and Wet Ingredients
Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
Once the browned butter has cooled, add 1 cup of light brown sugar and ⅔ cup of granulated sugar to the bowl with the butter.
Stir until well combined.
Then, add 2 large eggs (preferably at room temperature) and 2 teaspoons of vanilla extract.
Stir until completely combined and smooth.
Step 3: Combine Dry Ingredients and Mix Dough
In a separate bowl, whisk together 2 ¾ cups of all-purpose flour, 1 teaspoon of cornstarch, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and ¾ teaspoon of salt (reserve flaky sea salt for topping).
Gradually add the dry ingredient mixture to the butter mixture in 4-5 parts, stirring well after each addition until the dough is fully combined.
The resulting dough will be stiff.
Step 4: Prepare Mix-ins
Cut ⅔ cup of caramel bits or chop regular caramels into 6 pieces each.
Chop about 5 slices of crispy bacon into small pieces to yield approximately ½ cup.
Finely chop 4 oz of semisweet chocolate.
Add the caramel pieces, chopped bacon, and chopped chocolate to the cookie dough.
Stir to ensure even distribution throughout the dough.
Step 5: Form and Bake the Cookies
Scoop out 2 tablespoons of cookie dough and roll it into a ball.
Place each dough ball on the prepared baking sheet, spacing the balls about 2 inches apart.
Bake the cookies in the preheated oven for 9-11 minutes, or until the edges begin to turn golden brown.
Step 6: Final Touches and Cool
Immediately after removing the cookies from the oven, sprinkle them lightly with flaky sea salt.
Allow the cookies to cool on the baking sheet.
Once cooled, they are ready to be enjoyed.
Store any leftovers in an airtight container.
