Today, I’m excited to share a festive treat: Christmas cookies with coffee.
These cookies are soft, sweet, and the perfect pick-me-up for those cozy winter days.
Whether you’re sharing them at a party or enjoying them by the fire, they’ll add a sprinkle of joy to your holiday season.

Ingredients
For the wet combination:
- 3.17 oz brown sugar (packed well for accurate measurement)
- 1/4 tsp vanilla (Nielsen-Massey vanilla extract is my favorite)
- 1 egg (large, preferably organic)
- 3.17 oz butter (unsalted, at room temperature)
- 2 tbsp coffee
- 1 tbsp honey
- 1.23 oz cream cheese
For the dry elements:
- 1/8 tsp salt
- 1 tsp baking powder
- 7.05 oz flour (King Arthur all-purpose flour for best baking results)
For the chocolate inclusion:
- 3.17 oz chocolate chips (semi-sweet or dark chocolate chips)
Step 1: Prepare the Wet Ingredients
In a mixing bowl, combine 90 grams of butter and 90 grams of brown sugar.
Beat with a mixer for 1 minute until well mixed.
Add 1 egg and ¼ teaspoon of vanilla extract to the mixture.
Continue to beat for another 1 minute.
Incorporate 2 tablespoons of coffee, 35 grams of cream cheese, and 1 tablespoon of honey.
Beat the mixture for 1 minute until it becomes smooth and well combined.
Step 2: Mix in Dry Ingredients
Gradually add 200 grams of flour, 1 teaspoon of baking powder, and 1/8 teaspoon of salt to the wet mixture.
Mix until everything is well combined.
Fold in 90 grams of chocolate chips, ensuring they are evenly distributed throughout the dough.
Step 3: Chill the Dough
Once the dough is ready, cover it and let it rest in the refrigerator for 2 hours.
This step helps to firm up the dough, making it easier to handle and enhancing the flavors.
Step 4: Shape the Cookies
After the dough has rested, prepare it into 35-gram balls.
Decorate the cookie balls with truffles and additional chocolate chips if desired, adding an extra touch of decadence.
Step 5: Bake the Cookies
Preheat your oven to 200°C (392°F).
Place the cookie balls on a baking sheet, ensuring they are spaced well apart.
Bake in the preheated oven for 10 minutes or until the edges of the cookies are golden brown.
Step 6: Cool and Serve
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
