| Preparation Time | 25-35 minutes |
| Cooking Time | 7-9 minutes |
| Total Time | 32-44 minutes |
| Level of Difficulty | Easy |
Ingredients
For the cookies:
- 0.5 tsp salt
- 1 cup unsalted butter (softened at room temperature, about 70°F for easy creaming)
- 2.75 cups all-purpose flour (I always use King Arthur all-purpose flour)
- 2 tbsp light brown sugar (packed into the measuring cup)
- 1 tsp baking soda
- 2 tsp vanilla essence (use pure vanilla extract for best flavor)
- 1 cup plus 2 tbsp granulated sugar
- 1 large egg yolk
- 0.5 tsp baking powder
- 1 large egg
For coating:
- 1 to 1.25 cups holiday sprinkles (or any festive sprinkles you like)
Step 1: Preheat Oven and Prepare Baking Sheets
Preheat your oven to 350°F (180°C).
Line your baking sheets with parchment paper or silicone baking mats to ensure the cookies don’t stick.
Set the prepared sheets aside while you make the dough.
Step 2: Combine Dry Ingredients
In a medium-sized bowl, mix together the flour, baking soda, baking powder, and salt.
Set this bowl of dry ingredients aside to be combined with the wet ingredients later.
Step 3: Cream Butter and Sugars
In a large mixer bowl, cream together the butter and sugars on medium speed until the mixture is light in color and fluffy.
You should be able to see the color change and know it’s ready.
This usually takes about 2-3 minutes.
Step 4: Add Wet Ingredients
Add the egg and egg yolk to the mixer bowl and mix until well combined.
Then, add the vanilla extract and mix again until everything is fully integrated.
Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients in the mixer bowl.
Mix until the dough is well combined, but be careful not to over-mix.
The dough will be thick and a little sticky.
Step 6: Shape and Coat Cookie Dough
Create 1 1/2 tablespoon-sized balls of cookie dough.
Gently roll each ball into shape, then roll them in additional sprinkles to coat.
Place the coated dough balls on the prepared baking sheets, ensuring they are spaced apart to allow for spreading.
Step 7: Bake and Cool Cookies
Bake the cookies for 7-9 minutes.
The cookies will spread and the centers will look soft but should appear done.
Be careful not to over-bake.
The cookies will be a little puffy when you take them out of the oven but will fall a bit as they cool.
Let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
