Ingredients
For the cookies:
- 2 egg yolks
- 2 1/4 cups all-purpose flour (I always use King Arthur all-purpose flour)
- 1 1/2 tsp baking powder
- 1/2 tsp ground nutmeg (freshly grated for best flavor)
- 3/4 cup unsalted butter (softened to room temperature, about 68°F)
- 2 tsp vanilla essence (pure vanilla extract for superior taste)
- 1/2 cup eggnog
- 1/2 tsp ground cinnamon
- 1 cup white sugar
- 1/2 tsp salt
For the glaze:
- 3 tbsp eggnog
- 1/4 tsp cinnamon
- 1 cup confectioners’ sugar (sifted to prevent lumps)
- 1 tsp vanilla essence
- 1/4 tsp nutmeg
Step 1: Prepare the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
Once mixed, set the bowl aside, as you’ll incorporate these dry ingredients into the batter later.
Step 2: Cream the Butter and Sugar
In the bowl of your stand mixer fitted with a paddle attachment, or in a large bowl if using an electric hand mixer, cream together the butter and sugar.
Scrape down the sides of the bowl as needed and continue to beat on high speed until the mixture is light and fluffy, which will take a few minutes.
Step 3: Combine Wet Ingredients
Pour in the eggnog and vanilla extract into the creamed butter mixture.
Then, add the egg yolks one at a time, mixing on medium speed.
Ensure each yolk is fully incorporated by scraping down the bowl between additions.
Once combined, give it a final mix.
Step 4: Form the Cookie Dough
While mixing on low speed, gradually add in the dry flour mixture that you prepared earlier.
Mix until the ingredients are just combined, then finish the dough by using a spatula to incorporate any remaining bits of butter or flour at the bottom or sides of the bowl.
Step 5: Shape and Bake the Cookies
Portion out roughly two-tablespoon-sized pieces of dough (about 40 grams each) and drop them onto a parchment or silicone-lined baking sheet, leaving about 4 inches of space between each cookie to allow for spreading.
