Ingredients
For the dough:
- 2 cups all-purpose flour
- 6 oz cream cheese
- 1 cup unsalted butter (I like Kerrygold for this)
For the filling:
- 1 tsp vanilla extract (for best flavor)
- 3 cups packed brown sugar
- 4 large eggs
- 1 cup chopped pecans
- 4 tbsp unsalted butter
- 1 pinch salt
Step 1: Preheat and Prepare Tart Pans
Preheat your oven to 350°F (175°C).
While the oven is heating, lightly grease two mini tart pans to prevent the dough from sticking.
Step 2: Make the Dough
In a large bowl, combine butter and cream cheese.
Beat with an electric mixer until the mixture is smooth and creamy.
Add flour to the mixture and continue mixing until a smooth dough is formed.
Step 3: Form the Tart Shells
Divide the prepared dough into 48 small balls.
Place one ball into each greased cup of the tart pans.
Using your fingers or a tart tamper, press the dough balls to form tart shells that cover the bottom and sides of each cup.
Step 4: Prepare the Filling
In another large bowl, break the eggs and add brown sugar, chopped pecans, melted butter, vanilla extract, and a pinch of salt.
Mix until all ingredients are well combined and the mixture is smooth.
Step 5: Fill Tart Shells
Spoon the prepared filling into the tart shells, filling each shell about 3/4 full.
This allows room for the filling to expand slightly as it bakes.
Step 6: Bake and Cool
Place the filled tart pans in the preheated oven and bake until the tarts are golden brown, approximately 30 minutes.
Once baked, transfer the tarts to a wire rack and allow them to cool completely before serving.
