Ingredients
- 2 tablespoons oil
- 1 cup chopped onions
- 1 tablespoon grated ginger
- 1 tablespoon minced garlic
- 1 cup sliced carrots
- 1 cup mixed peppers
- 1 cup diced tomatoes
- Salt to taste
- 1/2 tablespoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon chili powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon turmeric
- 2 tablespoons water
- 1/2 cup coconut milk
- 1 cup cottage cheese (paneer)
Step 1: Sauté the Aromatics
Heat some oil in a skillet or heavy-based pan until it’s hot.
Once the oil is ready, add chopped onions and cook, stirring occasionally, until they become soft and translucent or just start to brown, which should take about 3-5 minutes.
This step builds the foundation of flavor for your curry.
Step 2: Add Ginger, Garlic, and Vegetables
Next, add the grated ginger and minced garlic to the pan, stirring quickly for about 1 minute to release their aromas.
Then, introduce sliced carrots, mixed peppers, diced tomatoes, and salt to taste.
Sprinkle in the aromatic curry mix, which consists of ½ tablespoon cumin, 1 teaspoon coriander, ½ teaspoon chili powder, ½ teaspoon cinnamon, and ¼ teaspoon turmeric.
Stir everything well to coat the vegetables with the spice mix.
Step 3: Simmer the Vegetables
Add 2 tablespoons of water to the pan, cover it, and cook for about 5 minutes until the tomatoes have softened.
This helps create a flavorful base for your curry.
After this initial cooking time, add vegetable stock or water (if stock is not available), stir gently, cover again, and cook for an additional 10 minutes.
Step 4: Incorporate Coconut Milk and Cheese
After 10 minutes of simmering, pour in ½ cup of coconut milk to the mixture, stirring gently to combine.
Next, add bite-sized pieces of cottage cheese (paneer) to the pan and stir gently to ensure the cheese is well distributed.
Cover the pan and cook for about 5 minutes.
This will heat the cheese through and infuse it with the delicious coconut gravy.
Step 5: Serve and Enjoy
After cooking, your cottage cheese curry will be ready to serve.
Pair it with your choice of side, such as steamed rice or chapati, for a complete meal.
