Ingredients
- 1 cup cottage cheese
- 1 cup pineapple chunks
- 1 banana, sliced
- 1/4 cup honey
- 1/4 cup turbinado sugar
- 1/2 cup heavy cream
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 vanilla bean, split in half, scraped
Step 1: Prepare the Fruit Mixture
In a food processor or high-speed blender, combine cottage cheese, pineapple, and banana.
Blend the mixture until it reaches a smooth and creamy consistency, stopping occasionally to scrape down the sides and bottom of the container.
Step 2: Add Sweeteners and Flavorings
Once the fruit mixture is smooth, add honey, turbinado sugar, heavy cream, sweetened condensed milk, vanilla extract, and vanilla bean to the blender.
Blend for about 30 seconds or until all ingredients are well combined and smooth.
Step 3: Freeze the Mixture
Pour the blended mixture into a loaf pan.
Cover the top with plastic wrap to prevent ice crystals from forming.
Place the loaf pan in the freezer and allow it to freeze for about 4 hours until firm.
Step 4: Serve the Dessert
After 4 hours, check the frozen mixture.
If it is too hard to scoop, let it sit at room temperature for a few minutes to soften slightly.
Once ready, scoop the dessert into bowls and drizzle with additional honey before serving.
