Ingredients
For the empanadas:
- 1/4 tsp black pepper (freshly ground for more aroma)
- salt to taste
- 1 cup large-curd cottage cheese (creamy style, such as Breakstone’s, for best texture)
- 1/2 tsp granulated garlic
- 1 tbsp fresh parsley (finely chopped)
- 1 tbsp fresh green onion (finely chopped)
- 9 store-bought empanada wrappers (thawed if frozen, about 4.5 inches in diameter)
- 1 tbsp fresh dill (finely chopped for even distribution)
For serving (optional):
- cheese sauce
- consommé (optional, for dipping)
Step 1: Preheat the Oven
Begin by preheating your oven to 375°F (190°C).
This ensures that your empanadas will bake evenly and reach the perfect golden brown color.
Step 2: Prepare the Filling
In a bowl, mix together cottage cheese, minced garlic, dill, parsley, chopped green onion, black pepper, and salt.
Stir until all the ingredients are well combined and set aside.
Step 3: Assemble the Empanadas
Lay out the empanada wrappers on a flat surface.
Take a tablespoon of the cottage cheese mixture and place it in the center of each wrapper.
Be careful not to overfill; this will make sealing more difficult.
Step 4: Seal the Empanadas
Fold the wrappers in half to form a half-moon shape.
Press the edges firmly to seal them.
For extra assurance that they don’t open during baking, brush the tops with a little water and press the edges again.
Step 5: Bake the Empanadas
Place the sealed empanadas on a baking sheet lined with parchment paper.
Bake them in the preheated oven for 15-20 minutes or until they are golden brown and crispy.
Step 6: Serve and Enjoy
Once baked, remove the empanadas from the oven and allow them to cool for a few minutes.
Serve warm with cheese sauce and consommé on the side if desired.
Enjoy your delicious homemade empanadas!
