Ingredients
- 1 pinch sugar (optional, to balance flavors)
- 12 oz frozen corn (thawed and drained)
- 3/4 cup butter (melted and cooled slightly)
- 2 packages jiffy corn muffin mix
- 1 medium onion (finely diced, about 1/4-inch pieces)
- 4 eggs (beaten until just combined)
- 1 cup small curd cottage cheese
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) to ensure it’s ready for baking once the batter is prepared.
Step 2: Mix the Batter
In a large bowl, combine the following ingredients: 2 boxes of Jiffy corn muffin mix, 4 beaten eggs, 3/4 cup of melted butter, 1 (12 ounce) package of thawed frozen corn, 1 finely diced medium onion, 1 cup of small curd cottage cheese, and a pinch of sugar.
Mix everything well until a thick batter forms.
The consistency will be thicker than usual for cornbread.
Step 3: Prepare the Casserole Dish
Butter a 9″ x 13″ casserole dish thoroughly to prevent the cornbread from sticking.
Pour the mixed batter into the prepared dish, spreading it evenly with a spatula.
Step 4: Bake the Cornbread
Bake the cornbread in the preheated oven for 35-40 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
This indicates that the cornbread is fully cooked.
Step 5: Cool and Serve
Once baked, remove the cornbread from the oven and allow it to cool for about 10 minutes.
This cooling time helps to enhance the flavor and makes it easier to cut and serve.
