Ingredients

  • 16 oz. cottage cheese
  • 4 eggs – beaten
  • 1/4 cup vegetable oil
  • 1 envelope onion soup mix
  • 1 cup very finely chopped onion
  • 1 1/2 – 2 cups corn flakes or special k cereal
  • 1/2 cup chopped onion (to be browned)
  • 1 cup finely chopped walnuts

Step 1: Preheat the Oven and Prepare Ingredients

Start by preheating your oven to 350°F (175°C).

In a large bowl, combine 16 ounces of cottage cheese.

Add 4 beaten eggs to the cottage cheese and mix well.

Pour in 1/4 cup of vegetable oil and stir to combine.

Add 1 envelope of onion soup mix and mix until evenly distributed.

Set this mixture aside for now.

Step 2: Sauté Onions and Add to Mixture

Finely chop 1 cup of onion and sauté it in a pan until browned.

Once the onions are nicely browned, add them to the cottage cheese mixture.

Stir until the onions are evenly integrated into the mixture.

Step 3: Incorporate Walnuts and Cereal

Next, incorporate 1 cup of finely chopped walnuts into the mixture.

Gradually add 1 1/2 to 2 cups of Corn Flakes or Special K cereal, mixing until everything is well combined.

If the mixture seems too wet, you can add more cereal to achieve the right consistency.

Step 4: Prepare Loaf Pan and Assemble

Grease a loaf pan well to prevent sticking.

Pour the mixture into the greased loaf pan and mold it into a loaf shape.

Make sure to smooth out the top so it cooks evenly.

Step 5: Bake and Serve

Place the loaf pan in the preheated oven and bake for 1 hour.

Once baked, remove it from the oven and let it cool slightly before serving.

This ensures your dish sets properly and slices well.

Enjoy your comforting and tasty cottage cheese loaf!
