Ingredients
For the meatballs:
- 1 tsp dried oregano
- 1 medium garlic clove, minced (freshly minced for best flavor)
- 1 tbsp chopped fresh marjoram
- 1 large egg, beaten
- 1/3 cup lactose-free milk
- 1/4 cup chopped fresh Italian parsley
- ground black pepper (freshly ground preferred)
- 1/2 cup lactose-free cottage cheese (I use Green Valley Creamery)
- 1 1/2 tsp kosher salt
- 1/3 cup minced onion (finely diced for even cooking)
- 1 lb lean ground beef
- 1/3 cup panko breadcrumbs
For cooking and serving:
- grated Parmesan cheese (optional, for serving)
- fresh basil, julienned (optional for garnish)
- 2 tbsp olive oil (or any neutral oil like canola)
Step 1: Prepare the Panko
Place the panko in a small bowl and cover them with enough lactose-free milk to moisten all the crumbs.
Stir quickly to ensure the panko absorbs the milk evenly.
Let them sit for 10 minutes to soften, then gently squeeze out any excess moisture.
Step 2: Mix Meatball Ingredients
In a large bowl, place the ground beef and break it apart gently using two forks.
Add the softened panko, finely minced onion, minced garlic, chopped parsley, chopped marjoram, dried oregano, lightly beaten egg, cottage cheese, kosher salt, and freshly ground black pepper.
Mix these ingredients gently with the forks until all ingredients are evenly incorporated.
Step 3: Shape the Meatballs
Using your hands, roll the mixture into 24 golf ball-sized meatballs.
Ensure they are uniform in size for even cooking.
Step 4: Cook the Meatballs
Heat olive oil in a wide, deep-sided skillet over medium heat until shimmering.
Add the meatballs to the skillet, either all at once or in batches if your pan is smaller.
Turn them to brown on each side, cooking for approximately 7 minutes in total.
Use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).
Step 5: Serve and Enjoy
Serve the cooked meatballs with your favorite pasta and sauce.
For an extra touch, top with julienned fresh basil and grated Parmesan cheese.
