- 1 cup cottage cheese (full-fat for best moisture)
- 1 large egg
- 1/8 tsp black pepper
- 1 tbsp yellow mustard
- 1 tbsp dried minced onion
- 1 lb ground beef
- 1/2 tsp salt
- 1/4 cup ketchup (I use Heinz)
- 1/3 cup grated parmesan cheese (freshly grated for flavor)
- 1/2 cup quick oats
Step 1: Prepare the Meatloaf Mixture
In a large bowl, combine the ground beef, cottage cheese, egg, quick oats, catsup, prepared mustard, instant minced onion, salt, and pepper.
Mix the ingredients lightly until well blended, ensuring that all components are evenly distributed.
Step 2: Shape and Cook in the Microwave
Press the mixture lightly into an 8 by 8-inch pan.
Cover the pan with waxed paper and microwave on high for 12 to 14 minutes.
If your microwave does not have a turntable, remember to turn the dish once halfway through the cooking time to ensure even cooking.
If necessary, drain any excess fat from the pan after cooking.
Step 3: Add Parmesan Cheese and Finish Cooking
Sprinkle the top of the meatloaf with Parmesan cheese.
