Ingredients
- 1 cup chopped fresh peaches (peeled, if desired)
- 1 tsp ground cinnamon
- 2 cups smooth cottage cheese (low fat also works well)
- 1/3 cup pure maple syrup (I use Coombs Family Farms Grade A Dark Robust)
- 1/2 cup whole milk
- 1 tsp vanilla extract (for best flavor, use pure vanilla extract)
Step 1: Blend the Cottage Cheese
Add the cottage cheese to a blender or food processor and blend until smooth and creamy.
Once blended, pour the mixture into a medium-sized bowl.
This will form the base of your ice cream.
Step 2: Mix in Additional Ingredients
Add the milk, maple syrup, cinnamon, and vanilla extract to the bowl with the blended cottage cheese.
Mix well to ensure all the ingredients are well combined.
Step 3: Incorporate Peaches and Prepare for Freezing
Gently fold in the chopped peaches, making sure they are evenly distributed throughout the mixture.
Pour the mixture into a 9×5 loaf pan.
Cover the pan with plastic wrap to prevent freezer burn.
