Ingredients
- 1.5 cups almond flour
- 0.5 cup brown sugar sweetener
- 3 tablespoons cocoa powder
- 0.25 teaspoon baking soda
- 0.25 teaspoon kosher salt
- 0.33 cup softened butter
- 1 egg
- 0.5 teaspoon vanilla extract
- 0.5 teaspoon peppermint extract
- 0.5 cup sugar-free white chocolate chips
- Crushed peppermints (optional)
Step 1: Preheat the Oven
Start by preheating your oven to 350°F (175°C).
This will ensure that your oven is at the right temperature by the time you’re ready to bake the cookies.
Step 2: Combine Dry Ingredients
In a medium-sized bowl, combine 1.5 cups of almond flour, 0.5 cups of brown sugar sweetener (such as Swerve), 3 tablespoons of cocoa powder, 0.25 teaspoons of baking soda, and 0.25 teaspoons of kosher salt.
Mix these dry ingredients thoroughly to ensure even distribution.
Step 3: Add Wet Ingredients
Add 0.33 cups of softened butter, 1 egg, 0.5 teaspoons of vanilla extract, and 0.5 teaspoons of peppermint extract to the bowl of dry ingredients.
Use a hand mixer to mix all the ingredients together until well combined, forming a cohesive dough.
Step 4: Fold in Chocolate Chips
Once the dough is well mixed, gently fold in 0.5 cups of sugar-free white chocolate chips.
Ensure the chips are evenly distributed throughout the dough.
Step 5: Form and Flatten Cookies
Scoop out the cookie dough using a 2-tablespoon scoop to form approximately 12 cookies.
Wet your fingers and flatten each cookie into 1-inch-thick discs on a baking sheet.
If desired, sprinkle crushed peppermints on top of the cookies for added flavor and decoration.
Step 6: Bake and Cool
Place the cookies on a baking sheet and bake in the preheated oven for about 12 minutes, or until the edges are set.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
