- 1 tsp salt
- 16 oz frozen mixed vegetables (such as Birds Eye mixed vegetables)
- 1 lb ground beef (80/20 lean for best flavor)
- 29 oz beef broth (I like Imagine Organic Beef Broth)
- 10 oz tomato soup (condensed)
- 1/2 tsp dried basil
- salt
- 1 tsp minced garlic (freshly minced for best flavor)
- 1/4 cup diced yellow onion
- 1 tsp parsley flakes
- 15 oz diced tomatoes
Step 1: Brown the Beef and Onions
Begin by placing a large stockpot over medium heat.
Add ground beef, chopped onions, minced garlic, and a pinch of salt to the pot.
Brown the beef until it is no longer pink, using a spatula to crumble and break it up as you cook.
Once fully browned, carefully drain off any excess grease.
Step 2: Add Soup Ingredients
To the browned beef and onions, add cubed potatoes, beef broth, tomato soup, diced tomatoes, and frozen vegetables.
Stir in sugar, Worcestershire sauce, and the dried parsley and basil.
Stir everything together to evenly combine all the ingredients.
Step 3: Boil and Simmer
Bring the mixture to a boil, then reduce the heat to a low simmer.
Allow the soup to simmer for 20-30 minutes, stirring occasionally to prevent sticking and to help the flavors meld together.
