Possible Ingredient Alternatives
Salmon can be replaced with other firm, fatty fish like trout or arctic char for a similar texture and omega-3 content. Adjust cooking time based on the thickness of the fillet. For a plant-based option, thick slices of firm tofu or tempeh can be used, though marinating time should be increased to enhance flavor absorption.
Honey can be substituted with maple syrup or agave nectar for vegans, maintaining sweetness while slightly altering the flavor profile. Use a 1:1 ratio for either alternative. For a low-carb option, consider a sugar-free syrup made with monk fruit or erythritol, but use less as these tend to be sweeter.
Whole grain and Dijon mustards can be replaced with yellow mustard or mustard powder mixed with a bit of vinegar for a milder flavor. If using mustard powder, start with half the amount and adjust to taste. For those avoiding mustard altogether, try a mixture of mayonnaise and horseradish for a creamy, tangy spread.

Ingredients
- 2 pounds salmon fillet (with skin)
- 2 tablespoons whole grain mustard
- 2 tablespoons dijon mustard
- 3 tablespoons of honey
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Chopped parsley and lemon slices (optional, for serving)
Step 1: Prepare the Baking Setup
Begin by preheating your oven to 400 degrees F.
While the oven is warming up, line a large rimmed baking sheet pan with a piece of foil, ensuring it covers the entire pan to make cleanup easier.
Step 2: Season the Salmon
Place the salmon on the foil, skin side down.
If desired, you can cut the salmon into portions before proceeding.
Lightly season the salmon with salt and pepper, making sure to distribute it evenly for optimal flavor.
Step 3: Prepare the Mustard Honey Sauce
In a small bowl, prepare the sauce by combining equal parts of your choice of mustards and honey, minced garlic, fresh lemon juice, smoked paprika, additional salt, and black pepper.
Mix everything thoroughly until well combined.
Spread this mixture evenly over the top of the salmon to form a delicious glaze.
Step 4: Wrap and Bake
Carefully bring up the sides of the foil around the salmon.
This step helps to keep the juices intact and prevents them from spilling over during the baking process.
Place the salmon in the preheated 400 degree F oven and bake for 18-20 minutes.
The cooking time may vary based on the size and thickness of the salmon.
It should be done when it reaches an internal temperature of 125-140 degrees F, is light pink, tender, and flaky in the center.
Step 5: Rest and Serve
Once baking is complete, remove the salmon from the oven and let it rest for several minutes.
This resting period allows the juices to redistribute throughout the fish.
Just before serving, garnish with fresh minced parsley for an added burst of flavor and color.
Serve the salmon with lemon wedges on the side for a refreshing finish.
