Today, I’m sharing my favorite Lebkuchen cookies. These German Christmas cookies are soft, spiced, and totally delicious.
They fill your home with the best holiday scents. Trust me; they’ll be the star of your cookie plate!

Ingredients
For the wet mixture:
- 1 egg (room temperature)
- 0.88 oz butter
- vanilla extract (I use Nielsen-Massey)
- 3.17 oz honey
- 2.82 oz brown sugar
For the dry mixture:
- 1/4 tsp baking powder
- 2.65 oz almond flour
- 1/8 tsp baking soda
- 1/4 tsp ground allspice
- 1/4 tsp ground nutmeg
- 5.29 oz flour (I use King Arthur all-purpose flour)
- 1/2 tsp ground ginger
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp ground cloves
- 1/2 tsp ground cinnamon
Optional additions and garnish:
- 0.05 oz freeze-dried strawberry (crushed)
- melted chocolate (for dipping)
Step 1: Prepare and Combine Wet Ingredients
Preheat your oven to 180°C (360°F).
In a mixing bowl, combine 25g of butter and 80g of brown sugar.
Add 1 egg and 90g of honey to the mixture, then mix well until smooth.
Stir in a few drops of vanilla extract for added flavor.
Step 2: Combine Dry Ingredients
In a separate bowl, combine 150g of flour, 75g of almond flour, 1 tablespoon of cocoa powder, 1/4 teaspoon of baking powder, and 1/8 teaspoon of baking soda.
Add 1/2 teaspoon of cinnamon, 1/2 teaspoon of ginger, 1/4 teaspoon of allspice, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of clove to the dry ingredients.
Mix until well combined.
Step 3: Incorporate Dry Ingredients into Wet Mixture
Gradually mix the dry ingredients into the wet mixture until the cookie dough is well combined and smooth.
If desired, you can fold in 1.5g of freeze-dried strawberries for added texture and flavor.
Step 4: Shape and Bake the Cookies
Spoon the cookie mixture onto a baking tray lined with parchment paper, shaping it into approximately 6 cookies, each about 10cm in diameter.
Bake in the preheated oven for 20 to 25 minutes or until the cookies are set and slightly golden around the edges.
Step 5: Cool and Decorate (Optional)
Once baked, allow the cookies to cool down completely on a wire rack.
If desired, melt some chocolate and drizzle it over the cooled cookies.
Optionally, add more freeze-dried strawberries on top of the drizzled chocolate for extra crunch and flavor.
Wait until the chocolate hardens before serving your delicious, spiced cookies.
