Looking for a reliable dinner option that won’t leave you stuck in the kitchen all evening? We’ve all been there – staring into the fridge at 6 PM, wondering what to make that’s both satisfying and straightforward. That’s where these mushroom pork chops come in handy. After trying countless pork chop recipes over the years, this one has become a regular at our dinner table, and for good reason. It’s quick enough for busy weeknights, but good enough to serve when friends come over for dinner.

Possible Ingredient Alternatives
For bone-in pork chops, boneless pork chops or chicken breasts can be used as alternatives. These options maintain a similar texture and protein content while accommodating different dietary preferences. Cooking times may need to be adjusted slightly. Button mushrooms can be replaced with cremini, shiitake, or portobello mushrooms for varied flavors and textures. These alternatives offer similar nutritional benefits and can enhance the dish’s umami profile. All-purpose flour can be substituted with cornstarch, arrowroot powder, or gluten-free flour blends for those avoiding gluten. Use about half the amount of cornstarch or arrowroot compared to flour, as they have stronger thickening properties. When using these alternatives, mix with a small amount of cold liquid before adding to the sauce to prevent clumping.

Estimated Nutrition
Estimated nutrition for the whole recipe (without optional ingredients):
- Calories: 800-900
- Protein: 60-70 g
- Fat: 50-60 g
- Carbohydrates: 25-30 g
Ingredients
For the pork chops:
- 1 tsp garlic powder
- 3 bone-in pork chops
- 1 tsp ground black pepper
- 1 tsp salt
For searing:
- 1 tbsp olive oil
- 2 knobs unsalted butter (I like Kerrygold unsalted butter)
For the mushroom gravy:
- 2 tbsp all-purpose flour (I always use King Arthur all-purpose flour)
- 1 small onion (finely chopped)
- 1.5 cups beef broth
- 6 oz button mushrooms
- 3-4 garlic cloves (freshly minced for best flavor)
For garnish:
- chopped parsley (freshly chopped for vibrant color)
Step 1: Season the Pork Chops
Begin by seasoning three bone-in pork chops on both sides with approximately 1 teaspoon of salt, 1 teaspoon of ground black pepper, and 1 teaspoon of garlic powder.
For an added flavor boost, you can optionally include paprika or other seasonings to your liking.
Step 2: Sear the Pork Chops
Heat a pan over medium-high heat and add a couple of knobs of unsalted butter along with about 1 tablespoon of olive oil, which will help prevent the butter from burning.
Once the butter has melted, place the seasoned pork chops in the pan, ensuring they aren’t overcrowded.
Sear the chops for a few minutes on each side until they are cooked through.
After searing, take the pork chops out of the pan and set them aside on a plate to rest.
Step 3: Prepare the Mushroom Mixture
Slice approximately six button mushrooms fairly finely.
Feel free to use other mushroom varieties if you prefer.
In the same pan, add a bit more olive oil and the sliced mushrooms.
Stir and fry the mushrooms, deglazing the pan in the process, until they begin to sweat and brown.
Step 4: Sauté Onions and Garlic
Add a small sliced onion and three to four cloves of chopped garlic to the pan with the mushrooms.
Stir the mixture and sauté until the garlic is fragrant, blending the flavors together.
Step 5: Make the Mushroom Gravy
Sprinkle in 2 tablespoons of all-purpose flour, stirring until the flour cooks through and a roux forms.
Gradually add 1.5 cups of beef broth to the pan, starting with 3/4 cup.
Stir well to combine the ingredients and allow the mushroom gravy to thicken.
Step 6: Simmer the Pork Chops in Gravy
Once the gravy is well combined, return the rested pork chops to the pan along with any juices that have collected on the plate.
Spoon some of the mushroom gravy over the chops.
Let the pork chops simmer in the gravy for a few more minutes, allowing the flavors to meld together.
Step 7: Garnish and Serve
For a fresh finish, sprinkle chopped parsley over the top as a garnish before serving your perfectly cooked pork chops with savory mushroom gravy.
Enjoy your delicious meal!
