Ingredients
- 200g unsalted butter, softened
- 250g light brown sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 320g plain flour
- 1/2 tsp bicarbonate of soda
- 200g chocolate chips + some for the top
- 350g-400g nutella
Step 1: Prepare the Ingredients and Dough
Start by preheating your oven to 180°C (160°C for fan ovens).
Meanwhile, in a bowl, combine 200g of softened unsalted butter and 250g of light brown sugar.
Cream these ingredients together until the mixture is smooth.
Once smooth, add 1 large room temperature egg and 1 teaspoon of vanilla extract to the mixture.
Fold in until just combined.
Gradually add 320g of plain flour and 1/2 teaspoon of bicarbonate of soda to the mixture.
Fold until everything is just combined, ensuring no flour remains at the bottom of the bowl.
Stir in 200g of chocolate chips or, if preferred, substitute with white chocolate chips or nuts.
Step 2: Prepare the Base
Take out about one-third of the dough (approximately 330g) and set it aside.
Line an 8-inch (20cm) springform cake tin with parchment paper or grease it with butter.
Press the remaining two-thirds of the dough into the bottom and up the sides of the prepared tin, ensuring the edges are about 0.5 to 1 cm thick.
Step 3: Add Nutella Filling
Spread 350g to 400g of Nutella evenly in the center of the cookie base.
Make sure the Nutella layer is smooth and even to ensure a balanced filling throughout the cookie pie.
Step 4: Top and Bake
Roll the reserved dough into a disc and place it on top of the Nutella layer.
Pinch the edges to seal the top layer to the sides and smooth out any lumps.
Sprinkle additional chocolate chips on top of the dough lid, pressing them in gently to secure.
Place the prepared tin in the preheated oven and bake for about 25 minutes, or until the top is golden brown.
Step 5: Cool and Serve
Allow the cookie pie to cool completely in the tin for at least 5 hours, or preferably overnight, to set properly.
Once cooled, carefully remove the cookie pie from the tin.
