Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 diced celery stalks
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1 1/2 cups chicken broth
- 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup parboiled rice
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (15.5 oz) can black-eyed peas, drained and rinsed
- 1 (8 oz) can tomato sauce
- 1 (15.25 oz) can corn, drained and rinsed
- 1 cup grated cheddar cheese
Step 1: Saute the Vegetables
Turn the Instant Pot to the sauté setting.
When the display reads “HOT,” add in the oil and swirl it around to coat the bottom.
Add in the chopped onions and celery.
Sauté for about 4 minutes until the vegetables are softened.
Stir in the garlic powder, salt, pepper, paprika, and broth.
Scrape the bottom of the pot to make sure nothing is sticking.
Turn off the Instant Pot.
Step 2: Add Chicken and Other Ingredients
Place the chicken evenly spread out into the pot.
Sprinkle the rice over the top of the chicken.
Next, add the Rotel, black-eyed peas, tomato sauce, and corn on top without stirring.

Step 3: Pressure Cook
Cover the Instant Pot and secure the lid.
Make sure the valve is set to the sealing position.
Set the manual/pressure cook button to cook for 3 minutes.
When the cooking time ends, let the pot sit undisturbed for 10 minutes to naturally release some of the pressure.
After 10 minutes, move the valve to venting to quickly release the remaining pressure, and then carefully remove the lid.
Step 4: Finish and Serve
Stir the contents of the pot thoroughly.
If there is any excess liquid, let the mixture sit for a few more minutes, and the rice will absorb it.
Finally, sprinkle the cheese on top and let it melt.
