Today, I’m sharing my delicious pumpkin pie French toast recipe.
It’s warm, spicy, and oh-so-satisfying—perfect for those chilly mornings.

Ingredients
For the batter:
- 4 large eggs
- 2/3 cup pumpkin puree (I use Libby’s pumpkin puree)
- 1/2 tsp cinnamon
- 1 tsp pumpkin spice
- 1 cup milk (whole milk for richness)
- 1 tsp vanilla extract
- 2 tbsp brown sugar (light or dark both work)
For the toast:
- 4 tbsp butter (unsalted is best for control)
- 8 slices thick white bread (brioche or challah work well)
For serving:
- powdered sugar
- syrup
- cinnamon-sugar
Step 1: Preheat and Prepare
Preheat a skillet or griddle to medium heat.
This will ensure it is ready for cooking once you have your bread prepared.
Step 2: Make the Pumpkin Mixture
In a medium bowl, whisk together the following ingredients until well combined: eggs, milk, vanilla extract, cinnamon, pumpkin pie spice, brown sugar, and pumpkin puree.
This will be the flavorful coating for your bread.
Step 3: Prepare the Skillet and Bread
Melt one tablespoon of butter on your preheated skillet or griddle, spreading it out to cover as much of the pan as possible.
While the butter is melting, take a slice of bread and dredge it in the pumpkin mixture, ensuring all sides are well coated.
Step 4: Cook the Bread
Place the soaked bread onto the pan.
Repeat with 1-2 additional slices of bread, depending on the size of your pan.
Cook each slice for 2-3 minutes, then flip and cook for another 2-3 minutes until both sides are golden brown.
Step 5: Keep Warm and Continue Cooking
Transfer the cooked slices to a plate and cover them to keep warm.
Repeat the process with the remaining slices of bread and pumpkin mixture, melting an additional tablespoon of butter in the pan between each batch to maintain the delicious browning and prevent sticking.
Step 6: Serve
Once all the bread is cooked, serve warm with your choice of syrup, cinnamon-sugar, and powdered sugar (using all three is highly recommended!).
