- 1/2 cup canned pumpkin pie mix (128 g)
- 1/4 cup natural peanut butter (64 g)
- 1/2 cup plus 2 tablespoons quick oats (57 g)
Step 1: Prepare for Baking
Preheat your oven to 350°F (177°C).
Line a large cookie sheet with parchment paper or a silicone baking mat to prevent the cookies from sticking and to make cleaning up easier.
Step 2: Mix the Batter
In a large mixing bowl, add pumpkin and peanut butter.
Whisk until the ingredients are fully mixed and the mixture is uniform in color.
Next, add the oats and stir until they are evenly mixed in.
The addition of the oats will thicken the mixture, giving it the texture of a thick batter rather than traditional cookie dough.
