| Preparation Time | 20-30 minutes |
| Cooking Time | 9-11 minutes |
| Total Time | 29-41 minutes |
| Level of Difficulty | Medium |
Ingredients
For the cookies:
- 2 tsp pure vanilla extract (for best flavor and aroma)
- 1 1/2 tbsp red food coloring
- 1 large egg yolk
- 1 1/2 cups white chocolate chips
- 3/4 cup butter (melted and cooled to room temperature)
- 2 2/3 cups all-purpose flour
- 1 tsp baking soda
- 1 cup packed light brown sugar
- 1 large egg
- 4 oz cream cheese (room temperature, about 70°F for easy blending)
- 1 tsp kosher salt
- 1/4 cup unsweetened cocoa powder (I use Hershey’s unsweetened cocoa powder)
For the topping:
- 1/2 cup white chocolate chips (I use Ghirardelli white chocolate chips)
Step 1: Preheat the Oven and Prepare the Baking Sheet
Preheat your oven to 350°F (175°C).
While the oven is heating, place a sheet of parchment paper on a cookie sheet to prevent the cookies from sticking and to make cleanup easier.
Step 2: Mix Dry Ingredients
In a small bowl, combine 2 ⅔ cups of all-purpose flour, ¼ cup of unsweetened cocoa powder, 1 teaspoon of baking soda, and 1 teaspoon of kosher salt.
Mix these dry ingredients together thoroughly and set the bowl aside for later use.
Step 3: Prepare Wet Ingredients
Using a stand mixer fitted with the paddle attachment, combine ¾ cup of melted butter, 4 ounces of room temperature cream cheese, 1 cup of granulated white sugar, 1 cup of packed light brown sugar, and 2 teaspoons of pure vanilla extract.
Mix on medium speed for 1-2 minutes until the mixture is thoroughly combined.
Scrape down the sides of the bowl as needed.
Step 4: Add Eggs and Coloring
Continue by adding 1 large egg and 1 large egg yolk to the wet mixture.
Mix on medium speed until the eggs are fully incorporated.
Then, add 1 ½ tablespoons of red food coloring and mix on low speed until the color is evenly distributed throughout the batter.
Step 5: Combine Dry and Wet Ingredients
Gradually add the previously prepared flour mixture to the bowl of wet ingredients.
Mix on low speed just until everything is combined.
Be careful not to overmix the dough.
Once combined, fold in 1 ½ cups of white chocolate chips until they are evenly distributed throughout the dough.
Reserve the remaining ½ cup of chips to use later.
Step 6: Form Cookie Dough Balls and Bake
Roll the dough into 1-inch balls and place them on the prepared cookie sheet, ensuring there is adequate spacing between each ball to allow for spreading.
Press 3-4 of the reserved white chocolate chips into the top of each cookie dough ball.
Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are crisp and the center is slightly soft.
The cookies will puff up while baking.
Step 7: Cool and Enjoy
Once baked, remove the cookies from the oven and allow them to cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.
Enjoy your delicious red velvet cookies with white chocolate chips!
