Ingredients
- 2 eggs (large, at room temperature)
- 2 tsp baking soda
- 3 1/2 cups granulated sugar
- 1 can condensed tomato soup
- 1/2 cup butter (softened to room temperature)
- 2 cups raisins (plump and moist, or soaked in warm water for 10 minutes then drained)
- 4 1/2 cups all-purpose flour (I always use King Arthur all-purpose flour)
- 2 cups chopped walnuts (lightly toasted for extra flavor)
- 2 tsp ground cinnamon
- 2 tsp salt
- 2 tsp ground nutmeg (freshly ground preferred for more flavor)
Step 1: Prepare the Wet Ingredients
Melt ½ cup of butter in the microwave.
Once melted, add 3 ½ cups of white sugar to the butter and let it cool slightly.
Mix in 2 beaten eggs until well combined.
