Ingredients
- Extra-virgin olive oil
- 2 pints cherry tomatoes (about 650 grams)
- 1 yellow onion, roughly chopped
- 1 small head of garlic, halved crosswise
- 1 bunch fresh basil
- 1 bunch fresh thyme
- 1 red chili, optional
- Salt and pepper to taste
- 1/2 cup full-fat coconut milk, soy cream, or heavy cream
- 1/2 cup vegetable broth, plus more as necessary
Step 1: Prepare Ingredients and Preheat Oven
Start by heating your oven to 480°F (250°C).
Drizzle some olive oil into a deep baking dish to coat the bottom.
Add the following ingredients to the dish: a roughly chopped onion, garlic cloves (cut side down), fresh basil leaves, thyme sprigs, a whole chili pepper, and halved tomatoes.
Drizzle more olive oil on top of the ingredients, then sprinkle generously with salt and pepper.
Step 2: Bake the Vegetables
Place the baking dish in the preheated oven and bake for 25 to 35 minutes, until the tomatoes are slightly charred and the other vegetables are tender.
This roasting process will deepen the flavors of your ingredients.
Step 3: Cool and Remove Thyme
Once the baking is done, remove the dish from the oven and let it cool for 5 to 7 minutes.
Carefully remove and discard the thyme sprigs, as they have served their purpose in flavoring the vegetables.
Step 4: Blend the Soup
Transfer the roasted vegetables and any juices in the baking dish to a blender.
Add a can of coconut milk and one cup of vegetable stock to the blender.
Remove the small center plug from the blender lid to allow steam to escape, then cover the lid with a kitchen towel.
Blend until the mixture is smooth and creamy.
Taste the soup and adjust the seasoning with additional salt and pepper, if needed.
Step 5: Serve
Pour the blended soup into bowls.
