Ingredients
For the potatoes:
- 4 large russet potatoes (about 10-12 oz each, scrubbed clean)
For the filling:
- 1/4 cup melted butter
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 3/4 tsp salt
- 1/2 cup sour cream (full-fat for best creaminess)
- 2 oz cream cheese (softened to room temperature)
- 1/2 cup cottage cheese (small curd preferred)
- 1 1/2 cups shredded cheddar cheese (sharp cheddar provides more flavor)
Step 1: Preheat and Bake the Potatoes
Preheat the oven to 400°F (200°C).
Place the potatoes on a baking sheet and bake for 1 hour, or until tender when pierced with a fork.
Once done, reduce the oven temperature to 375°F (190°C).
Step 2: Prepare the Potatoes for Stuffing
Allow the baked potatoes to cool until they are comfortable to handle.
Cut each potato in half lengthwise.
Scoop out the potato pulp from each half, leaving a thin shell intact.
Place the potato pulp in a large bowl and set the potato skins aside.
