Ingredients
For the chicken:
- 2-3 large boneless, skinless chicken breasts (about 1.5 lbs total)
For the dredge:
- 4 tbsp grated Parmesan cheese
- 1/2 tsp black pepper
- 2 tsp salt (kosher preferred)
- 4 tbsp all-purpose flour
- 1 tsp garlic powder
For the pan and sauce:
- 2 tbsp butter (I like Kerrygold unsalted butter)
- 1 head garlic (minced; about 4-5 cloves)
- 5 tbsp olive oil
- 1 1/4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1 1/4 cups heavy cream (full-fat for best results)
- 1 small onion (finely diced for even cooking)
- 2 tbsp fresh parsley (finely chopped for garnish)
Step 1: Prepare and Season the Chicken
Begin by seasoning your chicken breasts with salt, garlic powder, and pepper.
In a shallow bowl, combine the flour and parmesan cheese.
Dredge each chicken breast in the flour mixture, ensuring they are evenly coated, and then shake off any excess.
Step 2: Cook the Chicken Breasts
Heat 2 tablespoons of oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Swirl the pan to coat it evenly.
Fry 2-3 chicken breasts until they are golden on each side, cooked through, and no longer pink (about 4-5 minutes per side, depending on thickness).
Transfer the cooked chicken to a warm plate and set aside.
Repeat the process for the remaining chicken breasts, using additional oil and butter as needed.
When finished, transfer all the chicken onto the same plate.
Step 3: Sauté the Onions and Garlic
Reduce the heat to medium and wipe the skillet with a sheet of paper towel.
Sauté the onions in the remaining oil and juices until they are softened.
Smash 6 whole garlic cloves with the blunt edge of a knife, and add the remaining oil to the pan, mixing it through the onions.
Sauté the smashed garlic cloves along with any additional whole garlic cloves until fragrant, about 2-3 minutes.
Step 4: Make the Creamy Sauce
Add the broth to the pan to deglaze it, scraping up any browned bits.
Let the mixture simmer and reduce by half, which should take about 5 minutes.
Reduce the heat to medium-low and pour in the cream.
Bring the sauce to a gentle simmer for about 2-3 minutes to combine all the flavors.
Mix in the parmesan cheese and continue cooking gently for an additional 2-3 minutes until the cheese melts, stirring occasionally.
Season the sauce with salt and pepper to taste.
Step 5: Combine Chicken and Sauce
Add the chicken breasts back into the pan and let them simmer in the sauce for another 2-3 minutes to allow the chicken to soak up the delicious flavors and to thicken the sauce to your liking.
Step 6: Serve and Garnish
Once the sauce has thickened and the chicken is well-coated, transfer the dish to a serving platter.
