Ingredients
For the potatoes:
- 1 lb baby potatoes
- olive oil spray (or any neutral cooking spray)
For the dressing:
- 1/4 tsp garlic powder
- 2 green onions (thinly sliced, white and green parts)
- 1/2 tsp salt
- 1/2 small red onion (finely diced)
- 1/4 tsp black pepper
- 1/2 tsp mustard powder
- juice of 1/2 lemon (freshly squeezed for best brightness)
- 3 hard-boiled eggs (peeled and chopped)
- 7 oz fat-free cottage cheese (gives a creamy, protein-packed base)
- 1 tbsp erythritol sweetener
- 1/4 tsp dried dill
- 1/4 tsp onion powder
For the garnish:
- 1 pinch paprika (for color and mild flavor)
- fresh chopped chives
Step 1: Prepare the Baby Potatoes
Cut the baby potatoes in half and add them to a saucepan of salted water.
Bring the water to a boil, then reduce the heat and simmer until the potatoes are tender but still have a slight bite.
Once done, drain the water from the potatoes and set them aside to cool.
Step 2: Blend the Cottage Cheese
Using a blender, add the cottage cheese and blend until smooth.
Alternatively, you can use a tall jar and an immersion stick blender to achieve the same consistency.
Step 3: Create the Dressing
In a large bowl, combine the blended cottage cheese with lemon juice, granulated sweetener, salt, mustard powder, garlic powder, sliced red onion, dill, and black pepper.
Whisk the mixture until all ingredients are thoroughly combined.
Step 4: Assemble the Salad
Spray the cooled potatoes with olive oil spray.
Add the potatoes (peel if desired), quartered hard-boiled eggs, and chopped spring onions to the bowl with the cottage cheese mixture.
Gently toss everything together to ensure even coating and mixing.
Step 5: Final Seasoning and Garnish
Taste the salad and season with additional salt and black pepper if needed.
For garnish, sprinkle a little paprika and some chopped chives on top.
This adds both color and flavor to the dish.
