Ingredients
- 1 tsp black pepper (freshly ground preferred for more flavor)
- 1/2 stick unsalted butter (I prefer Kerrygold unsalted butter for this)
- 5-8 medium gold potatoes (peeled and cut into 1-inch chunks)
- 1 tsp dried chives
- 1/2 pint half and half (warmed slightly for a creamier mash)
- 1 tsp onion powder
Step 1: Prepare and Boil the Potatoes
Start by peeling, cutting, and washing 5 to 8 medium gold potatoes.
Place the prepared potatoes in a pot, cover them with water, and add salt to taste.
Boil the potatoes for 15 to 20 minutes until they are completely softened and break apart easily when pierced with a fork.
Step 2: Drain and Add Ingredients
Once the potatoes are fully cooked, drain them while they are still hot.
Immediately add half a stick of unsalted butter, half a pint of half and half (feel free to use more half and half if you prefer looser mashed potatoes), 1 teaspoon of dried or fresh chives, 1 teaspoon of onion powder, and 1 teaspoon of black or white pepper to the hot potatoes.
Step 3: Mix Until Smooth
Using an electric mixer, blend all the ingredients together until you achieve a smooth consistency.
Be sure to mix thoroughly so all the flavors are well combined.
Taste the mashed potatoes and adjust the seasoning if necessary by adding more salt, chives, onion powder, or pepper as desired.
Step 4: Final Touches and Serve
Add the remaining butter on top of the mashed potatoes and sprinkle a few chives for garnish.
