Today, I’m sharing my twist on a classic: mashed potatoes with mayonnaise.
Yep, you heard that right! It adds a lovely richness that takes your mashed potatoes to the next level.
Perfect for dinner or a side at your next gathering.
Let’s dive in!

| Preparation Time | 15-20 minutes |

| Level of Difficulty | Easy |
Ingredients
- 2 lb potatoes (Yukon Gold or Russet varieties work best for mashing)
- 1/4 cup mayonnaise (I prefer Hellmann’s for its creamy texture)
- salt to taste
- 1/4 cup unsalted butter (for richness, I use Kerrygold)
Step 1: Prepare the Potatoes
Start by peeling 2 lbs of Yukon Gold potatoes (or your preferred type of potatoes).
Rinse the peeled potatoes thoroughly under water to remove any dirt or debris.
After rinsing, cut the potatoes into small, evenly-sized pieces to ensure they cook faster and more uniformly.
Step 2: Boil the Potatoes
Fill a pot with water and bring it to a boil.
Add salt to taste once the water is boiling.
Carefully add the cut potatoes to the boiling water.
Cover the pot and let the potatoes cook for about 10 minutes, or until they are soft and easily pierced with a fork.
Step 3: Drain and Season the Potatoes
Once the potatoes are cooked, drain them thoroughly.
You can either return the drained potatoes to the same pot or transfer them to a large mixing bowl.
Sprinkle a bit of salt over the potatoes to enhance their flavor.
Step 4: Add Butter and Mayonnaise
To the seasoned potatoes, add butter and incorporate mayonnaise as your secret ingredient.
The mayonnaise will add a rich, creamy texture without the need for milk or cream.
The amount of butter and mayonnaise can be adjusted based on your personal preference for creaminess.
Step 5: Mash and Finish
Mash the potatoes to your desired consistency.
You can keep some texture for a more rustic feel or mash them until smooth.
For the finishing touch, drizzle melted butter on top of the mashed potatoes and sprinkle with fresh parsley.
Serve immediately and enjoy your creamy, flavorful mashed potatoes!
