Ingredients
For the soup base:
- 1 can whole peeled tomatoes (crushed by hand or with a potato masher, I use Muir Glen Organic)
- 1 tbsp chopped fresh basil
- 5 minced garlic cloves (freshly minced for best flavor)
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh oregano
- 2 tbsp butter (I like Kerrygold unsalted butter for this)
- 1 diced sweet yellow onion
- 1 tbsp chopped fresh thyme
- 2 cups sliced carrots
- 1 tbsp red wine vinegar
- 5 slices chopped bacon
- 3 tbsp tomato paste
- 1 tbsp flour
- 4 cups chicken stock (I like Swanson Chicken Broth for its rich flavor)
For the topping:
- 8 oz burrata cheese (at room temperature for best creaminess)
Step 1: Cook the Bacon and Prepare Aromatics
In a large pot over medium heat, add the bacon and cook until crispy, around 10 minutes.
Once the bacon is crispy, add the butter and allow it to melt down.
Then, add the fresh herbs and garlic, stirring gently for 2-3 minutes, or until the herbs and garlic are lightly cooked and fragrant.
Step 2: Cook Vegetables
Add the carrots and onion to the pot and continue cooking on medium heat until the vegetables are softened, approximately 10 minutes.
Ensure you stir occasionally to prevent sticking.
Step 3: Incorporate Tomato Paste and Flour
Add the tomato paste to the pot and stir continuously for 2-3 minutes until the paste darkens and thoroughly coats the vegetables and bacon.
Then, stir in the flour to coat the mixture evenly.
Step 4: Add Liquids and Simmer
Pour in the chicken broth and canned tomatoes.
Use a wooden spoon or a potato smasher to gently smash the tomatoes into the soup.
Stir in the red wine vinegar, then bring the pot to a full boil.
Once boiling, reduce the heat and let it simmer for 30-45 minutes to develop the flavors.
Step 5: Blend the Soup
Working in batches, add the soup mixture to a blender and pulse until smooth.
