Creamy Tomato Soup with Cottage Cheese

Ingredients

  • 5 oz baby carrots or chopped carrots
  • 1 chopped onion
  • 28 oz can whole peeled tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • 3 cups low sodium bone broth
  • 4 tsp minced garlic
  • 5 tbsp tomato paste
  • 1 1/2 tsp oregano
  • 4 tbsp basil pesto
  • 1 cup cottage cheese
 

Step 1: Preheat and Prepare Vegetables

Start by preheating your oven to 375°F (190°C).

On a large baking sheet, add 5 oz of baby carrots (or chopped carrots), 1 chopped onion, and the contents of a 28 oz can of whole peeled tomatoes, taking care to remove the tomatoes individually from the can.

Drizzle a little olive oil over the vegetables and tomatoes, then mix everything to coat evenly.

Season with a little salt and pepper.

 

Step 2: Roast the Vegetables

Place the prepared baking sheet in the preheated oven and roast the vegetables and tomatoes for about 50 minutes, or until they are well roasted and tender.

 

Step 3: Blend Roasted Vegetables and Ingredients

Once the vegetables are roasted, transfer them to a powerful blender or food processor.

Add the remaining contents of the can of whole peeled tomatoes.

Then, include 3 cups of low sodium bone broth, 4 teaspoons of minced garlic, 5 tablespoons of tomato paste, 1.5 teaspoons of oregano, 4 tablespoons of basil pesto, 1 cup of cottage cheese, a pinch of salt, and 4 teaspoons of black pepper.

Blend all the ingredients until smooth.

 

Step 4: Heat the Soup

Pour the blended mixture into a saucepan and place it on a burner set to low heat.

Heat the soup thoroughly for about 15 to 20 minutes, stirring occasionally to ensure it heats evenly.

 

Step 5: Optional Add Protein and Serve

For an extra boost of protein, you can optionally add pre-cooked chicken to the saucepan while reheating the soup.

Once the soup is heated through, serve and enjoy your healthy tomato soup!
