Ingredients
- 3 to 4 cups mixed vegetables (I use Birds Eye mixed vegetables)
 - 1 tbsp Italian spice mix
 - 1 can diced tomatoes
 - 3 garlic cloves (minced for best flavor)
 - 8 cups broth (chicken or vegetable)
 - 1 bay leaf
 - 3/4 tsp salt
 - 1 tbsp olive oil
 - 1 cup yellow onion (diced into 1/2-inch pieces)
 - 1 cup dry alphabet-shaped pasta
 - 1 medium potato (peeled and diced into 1/2-inch cubes)
 - 3/4 tsp dried thyme
 - 1 can tomato paste (I use Contadina)
 - 1/4 tsp ground black pepper
 
Step 1: Sauté Aromatics
Heat olive oil over medium heat in a 5-quart (or larger) pot or Dutch oven.
Add minced garlic, chopped onion, Italian seasoning, salt, thyme, and a dash of pepper.
Stir the mixture and cook for about 5 minutes until the onion softens and becomes translucent.
Step 2: Add Main Ingredients
Pour in the broth and add your choice of chopped vegetables, diced potato, a bay leaf, tomato paste, and a can of diced tomatoes.
Stir everything together to combine the ingredients well.
Step 3: Incorporate Pasta and Simmer
Bring the mixture to a boil, then add the uncooked pasta.
Cover the pot with a lid and reduce the heat to let it simmer for 30 minutes.
This allows the flavors to meld and the pasta to cook thoroughly.
After 30 minutes, remove the bay leaf from the soup.
Step 4: Serve and Enjoy
Serve the soup warm, topping each bowl with freshly grated Parmesan cheese if desired.
This adds an extra layer of flavor and richness to the soup.
