Ingredients
- 30 ounces drained black beans (from cans)
- 2 teaspoons extra virgin olive oil
- 2 minced garlic cloves
- 1/2 cup low-sodium, fat-free vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons freshly chopped cilantro
- 4 whole-wheat tortillas (optionally 6 corn tortillas)
- 12 ounces no-sugar-added salsa
- 1 cup shredded 2% cheddar cheese
Step 1: Preheat the Oven and Prepare Ingredients
Start by preheating your oven to 375°F.
Drain the black beans and set them aside.
This will get you ready for the next steps in the cooking process.
Step 2: Cook the Bean Mixture
In a medium skillet, add some oil and heat it over medium-low heat.
Once the oil is hot, add minced garlic and sauté until tender, approximately 4 minutes.
Then, add the drained black beans and broth to the skillet, cooking for another 3 minutes.
Season with cumin, black pepper, salt, and fresh cilantro, stirring well to combine all the flavors.
Step 3: Prepare the Casserole Dish
Spray the bottom of an 8×8-inch casserole dish with nonstick cooking spray.
Begin layering the casserole by placing one tortilla on the bottom.
Add 1/4 of the black bean mixture, followed by 1/4 of the salsa and 1/4 of the cheese.
Continue layering until all the ingredients have been used, finishing with a layer of cheese on top.
Step 4: Bake the Casserole
Cover the casserole dish with foil and bake in the preheated oven for approximately 20 minutes, or until the cheese is hot and bubbly.
Remove the foil and continue baking for an additional 8-10 minutes to allow the cheese to brown slightly.
Step 5: Serve and Garnish
Remove the casserole from the oven and let it cool for a few minutes.
Garnish with non-fat Greek yogurt or sour cream if desired.
