Preparation Time | 15-20 minutes |
Cooking Time | 60-70 minutes |
Total Time | 75-90 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 pound minced pork
- 1 large chopped onion
- 3 minced garlic cloves
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon pepper (adjust to taste)
- 1 tablespoon dill (dried)
- 1 teaspoon paprika
- 1 cup uncooked rice
- 1 cup crushed tomato
- 4 cups chicken stock
- 1 tablespoon olive oil
- 1 large shredded or coarsely chopped cabbage
- 2 cups shredded monterey jack cheese
Step 1: Cook the Pork and Onion Mixture
In a large skillet, add the ground pork and chopped onion over medium heat.
Break up the pork well and stir occasionally until the pork is cooked through.
This should take about 10 minutes.
Step 2: Seasoning and Rice Addition
Add minced garlic, salt, pepper, dried dill, and paprika to the skillet.
Stir and allow to cook for another 30 seconds to release the flavors.
Then add uncooked rice, crushed tomatoes, and chicken broth to the skillet.
Let the mixture cook for about 15 minutes or until the rice is almost cooked and most of the liquid has been absorbed.
Step 3: Prepare the Cabbage
While the pork and rice mixture is cooking, heat olive oil over medium-low heat in a large Dutch oven.
Add shredded cabbage and cook, stirring often, until it becomes softened, about 5 minutes.
Step 4: Assemble the Casserole
Preheat the oven to 375°F (190°C) and spray a 9×13-inch casserole dish with cooking spray.
Layer half of the softened cabbage on the bottom of the casserole dish.
Top with half of the pork mixture.
Add the remaining cabbage, and finally, layer with the remaining pork mixture.
Cover the casserole dish with foil to retain moisture during baking.
Step 5: Bake the Casserole
Place the casserole in the preheated oven and bake on the middle rack for 45 minutes.
This allows the flavors to meld together beautifully.
Step 6: Final Touch with Cheese
After 45 minutes, remove the foil from the casserole dish.
Sprinkle shredded cheese evenly over the top of the casserole.
Return it to the oven and bake for an additional 15-20 minutes, or until the cheese has melted and started to turn golden brown.
Serve hot and enjoy!
