Ingredients
For the base:
- 1 head cauliflower (cut into 1-inch florets)
- 17 oz gnocchi (I like Trader Joe’s cauliflower gnocchi for this)
For the casserole:
- kosher salt
- 2 tsp olive oil (or any other neutral oil like canola)
- 1 cup grated Parmesan cheese
- 2 tbsp salted butter
- freshly ground black pepper
Step 1: Prepare the Cauliflower and Gnocchi
Start by cutting the cauliflower into florets.
In a large pot of boiling water, cook the cauliflower for 3 minutes.
After 3 minutes, add the gnocchi to the pot.
Continue cooking for 2 more minutes, or until the gnocchi floats to the top.
Once done, turn off the burner and strain the cauliflower and gnocchi.
Step 2: Combine Ingredients in the Pot
Return the strained cauliflower and gnocchi back to the hot pot.
Stir in 3/4 cup of Parmesan cheese, butter, olive oil, several grinds of black pepper, and a few pinches of kosher salt.
Mix everything well until the cheese melts and the flavors come together nicely.
Step 3: Assemble the Casserole
Transfer the cauliflower and gnocchi mixture into an 8 x 8-inch casserole dish.
Evenly spread the mixture across the dish.
Sprinkle the remaining 1/4 cup of Parmesan cheese on top, along with a bit more salt and pepper for additional flavor.
Step 4: Broil to Finish
Place the casserole dish under the broiler and broil for about 3 minutes, or until the top turns golden brown.
Keep a close eye on it to prevent burning.
Once broiled to perfection, remove from the oven, let it slightly cool, and serve warm.
