Ingredients
For the chicken:
- black pepper to taste
- 1/2 tsp dried basil
- salt to taste
- 2 tbsp butter (I like Kerrygold unsalted butter for this)
- 1/2 tsp garlic powder
- 1 tbsp honey
- 1 tbsp oil (I use olive oil)
- 1/2 tsp dried oregano
- 4 chicken breasts (boneless, skinless)
For the sauce:
- 2/3 cup heavy cream (makes it extra creamy and rich)
- 1/2 cup low-sodium chicken broth
- 2 tbsp lemon juice
- 2 tsp minced garlic (freshly minced for best flavor)
- 1 tbsp butter
For the garnish:
- cracked black pepper to taste
- 1 tbsp fresh dill (chopped, for best aroma)
Step 1: Preheat and Season the Chicken
Preheat your oven to 375°F.
While the oven is heating, season the chicken with salt and pepper to taste, along with garlic powder, oregano, and basil.
Ensure all sides of the chicken are well-coated with the seasoning.
Step 2: Prepare the Skillet and Brown the Chicken
In a large oven-safe skillet, combine butter and oil.
Once the butter is melted, add honey and stir to combine.
Place the seasoned chicken in the skillet and brown for 2-3 minutes on each side.
The chicken will not be fully cooked at this stage.
Transfer the browned chicken to a plate and set aside.
Step 3: Make the Sauce
In the same skillet, add a little more butter and minced garlic.
Sauté for about 1 minute until fragrant.
Pour in the chicken broth, heavy cream, and lemon juice, stirring continuously over medium heat for 2-3 minutes until well combined and slightly thickened.
Step 4: Bake the Chicken
Return the browned chicken to the skillet with the sauce.
Transfer the skillet to the preheated oven.
Bake for 15 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.
Step 5: Finish and Serve
Once the chicken is cooked through, carefully remove the skillet from the oven.
Spoon the flavorful pan sauce over the chicken.
Sprinkle fresh dill over the chicken and the sauce.
Add cracked black pepper to taste.
