Ingredients

  • 4 chicken cutlets (or 2 large chicken breasts sliced in half lengthwise), roughly 1 to 1 ½ lbs. total
  • Seasoned salt, to taste
  • 2 cups crispy fried onions
  • 2 tablespoons plain flour
  • 1/4 teaspoon garlic powder
  • 2 beaten eggs

Step 1: Prepare the Baking Sheet and Oven

Preheat your oven to 350 degrees F.

Line a rimmed baking sheet with foil for easy clean-up and place a wire rack on top of the baking sheet.

Spray the wire rack with cooking spray to ensure the chicken doesn’t stick later.

Set the prepared baking sheet aside.

Step 2: Season the Chicken

Pat the chicken dry with a paper towel to remove excess moisture.

Sprinkle both sides of each piece of chicken with seasoned salt, ensuring they are evenly coated for consistent flavor.

Step 3: Prepare the Coating Mixture

In a large Ziploc bag, combine the fried onions, flour, and garlic powder.

Seal the bag and use a rolling pin or meat mallet to coarsely crush the fried onions until you have a coarse crumb mixture.

Transfer this mixture to a shallow dish for the dredging process.

Step 4: Dredge the Chicken

Place the beaten eggs in a separate shallow dish.

Working with one piece of chicken at a time, dip each piece in the egg mixture, ensuring it’s fully coated.
