Ingredients
For the chicken mixture:
- 1/2 tsp salt
- 5 cups cooked boneless chicken breasts (shredded or diced into 1/2-inch pieces)
- 1/3 cup sliced green onions
- 1 can cream of chicken soup (I use Campbell’s Cream of Chicken Soup)
- 1/2 cup chicken broth
- 1 container sour cream (full-fat for best creaminess)
- 1/2 tsp ground black pepper (freshly ground preferred)
For the cracker base and topping:
- 8 tbsp unsalted butter, melted (I like Kerrygold unsalted butter for this)
- 60 Ritz crackers, crushed
Step 1: Preheat the Oven and Prepare the Dish
Gather all the ingredients and position a rack in the center of the oven.
Preheat the oven to 325°F (163°C).
Lightly grease a 2-quart casserole dish to prevent sticking.
Step 2: Mix the Chicken Filling
In a large bowl, combine the condensed cream of chicken or cream of mushroom soup, sour cream, chicken broth, diced cooked boneless chicken breasts, fine salt, freshly ground black pepper, and thinly sliced scallions (if using).
Mix until all the ingredients are well incorporated.
Step 3: Create the Cracker Base
Crumble 30 Ritz crackers into the bottom of the prepared casserole dish.
Drizzle 4 tablespoons of melted unsalted butter over the crumbled crackers to create a flavorful and crispy base.
