Today, I’m sharing my chicken noodle soup casserole. It’s like a warm hug in a dish!
Packed with chicken, noodles, and all the good stuff, it’s perfect for chilly nights or when you need a little extra comfort.

Ingredients
For the casserole:
- 1/4 tsp black pepper (freshly ground preferred for more flavor)
 - 2 cups whole milk
 - 1/4 tsp salt
 - 2 cups mixed vegetables (I use Birds Eye mixed vegetables)
 - 2 cups cooked chicken (shredded or diced)
 - 1 stick unsalted butter (I like Kerrygold unsalted butter for this)
 - 1/4 cup flour
 - 3 tbsp minced garlic (freshly minced for best flavor)
 - 1/2 cup diced celery
 - 1 cup chopped onion
 - 12 oz wide egg noodles
 - 2 cups chicken broth (I use Swanson chicken broth)
 - 2 cups shredded sharp cheddar cheese
 
For the topping:
- 1/2 stick unsalted butter, melted
 - 1 cup crushed ritz crackers
 - 1/4 cup grated parmesan cheese
 
Step 1: Prepare the Oven and Noodles
Preheat the oven to 400°F (200°C).
While the oven is heating, bring a large pot of water to a boil.
Once boiling, add a 12-ounce bag of wide egg noodles and cook until al dente, then drain and set the noodles aside.
Step 2: Sauté Vegetables and Garlic
In a large skillet over medium heat, melt 1 stick of butter.
Add 1 cup of chopped onion and ½ cup of diced celery to the skillet, sautéing until they are tender.
Stir in 3 tablespoons of minced garlic and cook for an additional minute until fragrant.
Step 3: Make the Sauce
Add ¼ cup of flour to the skillet and whisk to combine, cooking for 1-2 minutes until the flour is slightly cooked.
Gradually pour in 2 cups of chicken broth, stirring continuously until the mixture thickens.
Add 2 cups of whole milk to the skillet and mix well.
Season with ¼ teaspoon of salt and pepper, adjusting to taste.
Step 4: Combine Chicken and Vegetables
Stir in 2 cups of mixed vegetables and 2 cups of cooked chicken (shredded or diced) into the skillet.
Turn off the heat and mix in 2 cups of shredded sharp cheddar cheese, reserving some cheese for topping.
Step 5: Assemble the Casserole
In a greased 9×13 inch baking dish, combine the cooked noodles with the chicken mixture, stirring to ensure everything is well combined.
Sprinkle the reserved cheddar cheese evenly over the top of the casserole.
Step 6: Add Topping and Bake
Crush about 1 cup of Ritz crackers and mix with ¼ cup of grated Parmesan cheese.
Sprinkle this mixture over the casserole.
Drizzle ½ stick of melted butter over the cracker topping.
Bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
Step 7: Cool and Serve
Remove the casserole from the oven and let it cool slightly before serving.

I made this for dinner tonight. Followed the directions, but I did add about 2 tsp of Italian seasoning to the filling. It was reallllly good! Thank you for sharing this recipe.
