Ingredients
For the casserole:
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 1 can cream of chicken soup
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/4 cup sour cream (full-fat for richness)
- 1 rotisserie chicken (meat removed and chopped into 1/2-inch pieces)
- 1 cup cottage cheese (small-curd preferred for smoother texture)
- 1/4 tsp garlic powder
- 16 oz spaghetti
- 8 oz cream cheese (softened at room temperature)
For the topping:
- 2 tsp dried parsley
- 1/4 cup Parmesan cheese (freshly grated for best flavor)
- 2 cups shredded mozzarella cheese (I use Sargento)
Step 1: Preheat Oven and Prepare Baking Dish
Preheat your oven to 300ºF (150ºC).
Lightly spray a 9×13-inch baking dish with cooking spray to prevent the casserole from sticking.
Step 2: Cook and Drain Spaghetti
Cook the spaghetti according to the package directions.
Once cooked, drain the spaghetti and set it aside.
This will be combined with the other ingredients later.
Step 3: Mix the Main Ingredients
In a large bowl, combine the chopped rotisserie chicken, cream of chicken soup, cream of mushroom soup, sour cream, cottage cheese, cream cheese, chicken broth, salt, pepper, and garlic powder.
Mix these ingredients well to ensure an even distribution of flavors.
