Today, I’m excited to share my favorite recipe for Christmas cookies with dates.
These cookies are sweet, chewy, and packed with festive flavors.

Ingredients
For the dry ingredients:
- 1/4 tsp ground cloves
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg (freshly ground preferred for more flavor)
- 3 cups all-purpose flour (I always use King Arthur all-purpose flour)
For the wet ingredients:
- 1 tsp vanilla essence
- 1 cup unsalted butter (I like Kerrygold unsalted butter for this)
- 2 large eggs (room temperature for better emulsification)
- 1 cup white sugar
- 1/2 cup light brown sugar
For the mix-ins:
- 2 1/2 cups chopped dates (pitted and finely chopped for even distribution)
- 2 1/2 cups chopped pecans
For the topping:
- 2 tbsp white sugar
Step 1: Preheat Oven and Prepare Baking Sheets
Start by preheating your oven to 325°F (163°C).
Line your baking sheets with parchment paper or silicone liners to ensure the cookies don’t stick and are easy to remove once baked.
Step 2: Combine Dry Ingredients
In a medium-sized bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
Once mixed, set the bowl aside to be added to the wet ingredients later.
Step 3: Mix Wet Ingredients
Using an electric mixer set to medium speed, beat together the butter, 1 cup of sugar, and the brown sugar until well combined and creamy.
Add the eggs one at a time, mixing well after each addition to ensure they are fully incorporated.
Mix in the vanilla extract for some additional flavor.
Step 4: Combine Dry and Wet Ingredients
Reduce the mixer speed to low.
Gradually add the flour mixture from Step 2 to the butter and sugar mixture.
Mix only until the dry ingredients are moistened to avoid overmixing.
Gently stir in the pecans and chopped dates until they are evenly distributed throughout the dough.
Step 5: Shape and Bake the Cookies
Drop the cookie dough by rounded tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
Sprinkle the tops of the cookies with the remaining 2 tablespoons of sugar for a slightly sweet crust.
Bake each pan, one at a time, in the preheated oven for 16 to 20 minutes, or until the cookies are lightly browned on the edges.
Step 6: Cool and Enjoy
Allow the cookies to cool on the baking sheets for about 2 minutes.
Then, transfer them to wire racks to cool completely.
Once fully cooled, the cookies are ready to be enjoyed.
Store in an airtight container to keep them fresh.
