These cookies are delicious, easy to make, and perfect for sharing.

Ingredients
- 1 egg
- 1/2 tsp vanilla extract (I use Simply Organic vanilla extract)
- 5 tbsp butter (softened to room temperature, about 70°F)
- 1 1/2 cups gluten-free baking flour
- 1/2 cup plus 2 tbsp sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
Step 1: Prepare the Oven and Mix the Wet Ingredients
Preheat your oven to 350 degrees F.
Using an electric mixer or a stand mixer, beat together the butter and unrefined sugar on medium-low speed for about 2 minutes until the mixture is smooth.
Add the egg and vanilla extract, then beat until well combined.
Step 2: Form the Dough
Gradually add the dry ingredients to the wet mixture and continue mixing until a dough ball forms.
Ensure everything is thoroughly combined and forms a soft dough that holds together well.
Step 3: Roll Out the Dough
Cut two pieces of parchment paper.
Place the dough between these two sheets, then use a rolling pin to roll out the dough to about ¼-⅛ inch thick.
Be careful not to make it too thin to avoid overly crispy cookies.
Remove the top piece of parchment paper and set it aside.
Step 4: Cut and Decorate the Cookies
Using your favorite cookie cutters or a small glass, cut out your desired cookie shapes.
Carefully remove the excess dough from around the cutouts.
Wrap this excess dough in plastic wrap and place it in the fridge while you finish the current batch.
If desired, sprinkle dye-free sprinkles over the cookies.
Step 5: Bake the Cookies
Without removing the cookies from the parchment paper, transfer the entire sheet of parchment with the cookies onto a baking sheet.
Place the baking sheet in the preheated oven and bake for about 6 minutes or until the cookies appear cooked and the edges are just a tiny bit crispy.
Avoid letting the cookies brown to prevent them from getting too crunchy.
Step 6: Cool and Repeat
Remove the cookies from the oven and let them cool on the baking sheet for about 3 minutes.
Then, transfer them to a wire cooling rack to cool completely.
Repeat the process with the remaining dough, reusing the parchment sheets as much as possible to minimize waste.
