Ingredients
For the arepas dough:
- 2 3/4 cups masa harina (I use Maseca brand)
- 2 1/2 cups hot water
- 12 oz cottage cheese (small curd works best)
- 1/3 cup margarine
- 1 tbsp salt
For serving:
- 1 cup queso fresco (crumbled or shredded)
- 6 tbsp butter
Step 1: Prepare the Dough
In a mixing bowl, combine masa harina, margarine, salt, and cottage cheese.
Gradually add hot water to the mixture.
Mix well until all ingredients are incorporated.
Step 2: Knead the Mixture
Once the ingredients are combined, knead the dough thoroughly after each addition until it resembles new play dough.
This ensures a smooth and cohesive dough for your tortillas.
Step 3: Shape the Tortillas
Pinch off golf-sized balls of the dough.
Take two Ziploc bags, cut one side of each bag open, and place a ball of dough in between them.
Press it down gently to flatten the dough into 1/4 inch thick circles.
Step 4: Cook the Tortillas
Heat a griddle and lightly grease the surface.
Place the flattened circles of dough onto the hot griddle and cook until they are lightly browned, about 1-2 minutes per side.
Step 5: Serve and Enjoy
Once cooked, remove the tortillas from the griddle and serve warm.
Top them with butter and crumbled queso fresco for a delicious finishing touch.
