Ingredients
For the toast:
- 2 slices sourdough bread (thick-cut for best results)
For the cheese spread:
- 1/2 cup cottage cheese (full-fat for extra creaminess)
- freshly ground black pepper, to taste
- kosher salt, to taste
For the mushroom topping:
- freshly ground black pepper, to taste (freshly ground preferred)
- 1 tsp fresh thyme, chopped (for best flavor and aroma)
- 2 tbsp olive oil (I use California Olive Ranch extra virgin)
- kosher salt, to taste
- 3 garlic cloves, thinly sliced
- 1 lb crimini mushrooms (cleaned and quartered)
For the garnish:
- crushed red pepper flakes, for garnish (I use McCormick brand)
- 1/2 cup baby arugula (or mature arugula for a more peppery bite)
Step 1: Prepare the Garlic
Heat olive oil in a large skillet over medium-high heat.
Once the oil is hot, add minced garlic and cook, stirring frequently, until it turns light golden-brown, which should take about 30 seconds to 1 minute.
After cooking, transfer the garlic to a paper-towel-lined plate to drain and set aside.
Step 2: Cook the Mushrooms
In the same skillet, add the mushrooms and cook them, stirring occasionally, until they are golden-brown, which will take about 6 to 8 minutes.
At this stage, stir in fresh thyme and season with salt and pepper to taste, ensuring the mushrooms are well-coated with the seasoning.
Step 3: Prepare the Cottage Cheese Mixture
While the mushrooms are cooking, take a medium bowl and whisk together cottage cheese, salt, and pepper until they are fully combined.
This will create a creamy spread that complements the mushrooms beautifully.
Step 4: Assemble the Toast
Spread the cottage cheese mixture evenly over each slice of toasted bread.
Once the mixture is spread, top each slice with the sautéed mushrooms, a handful of arugula, and a sprinkle of crushed red pepper flakes for added flavor and a bit of heat.
