Ingredients
For the beef mixture:
- 4 oz mushrooms (sliced thinly)
- 1 tsp salt
- 1 cup beef broth (I use Swanson’s low-sodium broth)
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion (finely diced)
- 1 tsp dried thyme
For the creamy sauce:
- 1/2 cup sour cream (full-fat for extra creaminess)
- 1 cup cottage cheese (I recommend Daisy brand for cottage cheese)
- 1 tsp dijon mustard
- 1 tsp worcestershire sauce
- 1/2 tsp black pepper (freshly ground for best flavor)
For serving:
- 8 oz egg noodles
Step 1: Cook the Egg Noodles
Begin by cooking the egg noodles according to the package instructions.
Once cooked, drain and set aside for later use.
Step 2: Brown the Ground Beef
In a large skillet, heat olive oil over medium-high heat.
Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks.
This should take about 5-7 minutes.
Step 3: Sauté the Vegetables
Once the beef is browned, add chopped onion to the skillet and cook until softened, which should take about 3-4 minutes.
Next, add the sliced mushrooms and continue cooking until they are tender, about 3-5 minutes more.
Step 4: Make the Creamy Sauce
While the beef and vegetables are cooking, prepare the creamy sauce.
In a blender or food processor, combine cottage cheese, sour cream, Dijon mustard, Worcestershire sauce, thyme, pepper, and salt.
Blend until the mixture is smooth and creamy.
Step 5: Combine and Simmer
Add the blended cottage cheese mixture to the skillet with the beef and vegetables, stirring to combine.
Pour in the beef broth and bring the mixture to a simmer.
Reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld.
Step 6: Serve
Once the sauce has thickened slightly, serve it over the cooked egg noodles.
Mix gently to coat the noodles evenly in the creamy beef sauce.
