Ingredients
- 1 cup cottage cheese (4% fat)
- 12 ounce bag frozen cauliflower rice
- 1/4 cup sharp cheddar cheese
- Salt (to taste)
- Onion powder (to taste)
- Garlic powder (to taste)
- Pepper (to taste)
- Oooflavors mashed potato flavoring (optional)
Step 1: Prepare the Ingredients
Gather all the ingredients you’ll need: 1 cup of cottage cheese (4% fat), a 12-ounce bag of frozen cauliflower rice, 1/4 cup of sharp cheddar cheese, salt, onion powder, garlic powder, and optional pepper.
For an extra flavor boost, you can add OOOFlavors Mashed Potato Flavoring if desired.
Step 2: Thaw the Cauliflower Rice
Use the dry cook method for the cauliflower rice.
Place about a third of the frozen cauliflower rice in a bowl and microwave it for about 5 minutes to thaw it.
This will prepare it for cooking.
Step 3: Cook the Cauliflower Rice
Transfer the microwaved cauliflower rice to a pan over medium heat.
Cook the cauliflower rice until all the moisture is evaporated, stirring occasionally to ensure even cooking.
This process may take some time, so be patient until the rice is dry.
Step 4: Blend the Cottage Cheese Mixture
In a separate bowl, blend 1 cup of cottage cheese with your choice of spices.
Suggested spices include 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and salt and pepper to taste.
Mix until combined to enhance the flavor of your base mixture.
Step 5: Combine Ingredients for Tater Tots
Split the cooked cauliflower rice into two separate bowls.
In the first bowl, add the blended cottage cheese mixture along with 1/4 cup of cheddar cheese.
Mix well until everything is combined.
In the second bowl, repeat the process, but add the OOOFlavors Mashed Potato Flavoring along with the cheddar cheese.
Mix until fully incorporated.
Step 6: Shape the Tater Tots
Using your hands, shape the mixture from each bowl into tater tot forms, roughly the size of a tablespoon.
Make sure the shapes are cylindrical to resemble traditional tater tots.
Step 7: Bake the Tater Tots
Preheat your oven to 350°F (175°C).
Place the shaped tater tots on a baking sheet lined with parchment paper to prevent sticking.
Bake in the preheated oven for 35 minutes, monitoring them for doneness and color.
Step 8: Final Browning and Serving
If the tater tots need additional browning, continue baking them for an extra 5 minutes.
Once they are done, remove them from the oven and let them cool slightly before serving.
For extra flavor, you can serve the tater tots with keto ketchup or ranch dressing.
