Preparation Time 15-20 minutes
Cooking Time 60-120 minutes
Total Time 75-140 minutes
Level of Difficulty Easy

Ingredients

  • 16 oz cottage cheese
  • 1/4 cup sour cream
  • 20 drops liquid stevia
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1/4 cup granulated allulose
  • 1 tablespoon gelatin
  • 2 tablespoons protein powder (vanilla or plain)

Step 1: Gather and Combine the Base Ingredients

Start by gathering all your ingredients: 16 oz of cottage cheese, 1/4 cup of sour cream, 20 drops of liquid sweetener (like French vanilla Stevia), 1 teaspoon of vanilla extract, 2 teaspoons of lemon juice, 1/4 cup of granulated sweetener (like allulose), 1 tablespoon of gelatin, and 2 tablespoons of protein powder (like Keto Chow vanilla cream).

In a bowl, combine the cottage cheese and sour cream until mixed well.

Step 2: Add Flavorings and Sweeteners

Add 20 drops of liquid sweetener to the bowl, followed by 1 teaspoon of vanilla extract and 2 teaspoons of lemon juice.

Stir these ingredients together until they are well combined.

Step 3: Mix in Remaining Ingredients

Next, mix in 1/4 cup of granulated sweetener and 1 tablespoon of gelatin, ensuring they are evenly distributed.

Finally, incorporate 2 tablespoons of your chosen protein powder into the mixture.

Step 4: Blend Until Smooth

Using an immersion blender or a food processor, blend the entire mixture until it reaches a creamy and smooth consistency.

This will help to create a light texture in your cheesecake.

Step 5: Prepare and Chill the Ramekins

Prepare four ramekins or small containers for serving.

Evenly distribute the cheesecake mixture into each ramekin.

Cover the ramekins and refrigerate for at least 1 hour, or overnight for the best results to ensure the cheesecake sets properly.

Step 6: Serve and Enjoy

Once the cheesecake has set, remove it from the refrigerator and serve.

For an extra touch, feel free to sprinkle some cinnamon or nutmeg on top before serving.

Enjoy your delicious no-bake cottage cheese cheesecake!
